First proper meal in Hakata was Taiho Ramen, a branch of its original famed shop from Kurume.

From the posters around, the ramen here is made from Yobimodoshi technique - i.e., the pot used to cook the tonkotsu broth has never been emptied, fresh ingredients are simply added on each day for the depth of flavour.

We had the Mukashi Ramen which includes homemade lard, and fried lard “karikari” within, on top of the usual ingredients of bamboo shoot and chashu. Very rich and creamy broth (though it also meant it gets overwhelming).

Within the same night we got to try two of Fukuoka’s specialties, because I also ordered fried rice that came with a small dollop of mentaiko!😂 the fried rice itself was very appetizing - fragrant, light and fluffy, every individual grains well cooked with no mushiness.

Mentaiko was fresh, great with the kewpie on the side and complemented the fried rice well.

Gyoza, needless to say, was also fantastic with its crisp, slightly chewy skin!
