Goddamn this was delicious. I never liked pho in SG but that's cos they were all not up to par. Now I understand why ppl love pho

Every detail was great, down to the frigging beansprouts which were crunchy. The dark sauce has some caramel earthiness which I didn't like, but the chili was like McDonald's garlic chili on crack

The soup has good depth and was slightly sweet, but the toppings were the star. Noodles were soft. Here goes the review of the toppings

Sliced beef was meh but it works w the sauces
Beef tendon was super tender
A single sliced beef was tough but full of beefiness
The beef jelly thing was amazing. It's literally melty beefy umami
The beef balls were so ridiculously bouncy and savoury, with bits of ligaments inside. They're by far the best I've ever had and it's hard to even describe how crazy good they were
Tripe was crunchy too
There's one piece of brisket/short plate? Which was sweet and flavourful
The meats were really well marinated and full of depth in general

Despite the proportion of tourists, this is a must visit spot

Without much hesitation, my eyes zoomed in to the Phở Tai (70,000 VND), which is a bowl of rice noodles topped with sliced raw beef. When served, the beef is of a medium rare doneness after the boiling broth is scooped into the noodles. The X-factor in this bowl of phở is definitely the beefy broth that brings about a balance of sweetness and savouriness, further accentuated by the addition of the humble onion and chopped-up spring onion. As you slurp up the noodles and broth, you will find yourself finishing the bowl clean within minutes. This breakfast for champions will definitely fill you up to last through the morning till lunchtime.

Last breakfast of the trip was at Pho Hoa. Their 40+ years old recipe of Southern style pho comes with a sweeter broth that works beautifully with a dash of lime and generous handful of basil leaves. Because of the many tourists that come over the years, it's said that portions have also evolved to become larger at this family-owned establishment. Interestingly enough, they also serve 'Youtiao' (Chinese cruller) and 'Baos' here.
