Wow... Oh wow.. Speechless. Norwegian langoustines (they taste somewhat like a cross between a lobster and an English langoustine) are pan fried in pine butter, then brushed with a subtle pickling liquor. They are served in a bowl of pine. Servers pour pine essence onto the dry ice beneath and the scent of a forest takes over your senses. In that moment, you forget you are in a formal, Michelin-starred environment; and you quickly tuck in with your fingers!
