My favourite dish at last night's "The Quarters Experience" was the wittily-named "Shiok Bak". It was a mouthwatering sight and yet, managed to exceed my expectations in terms of taste.
The roasted pork belly, which's one of the two key stars here, was an astonishment of tender juiciness edged with crackling of epic crunchiness. It had a clean, fresh taste as well which is important to me.
To eat, you're suppose to slide a slice or two of pork belly between the folded "pau" (which is the kind used in "kong bak pau"), add a lettuce leaf and a healthy dollop of the house-made "rempah" (spice paste).
Chef-owner Chung Deming is understandably secretive about what goes into his "rempah" as it took him a lot of R&D to perfect the taste. I found the thick paste very fragrant and not too spicy. So even if you don't usually eat chilli, I encourage you to try a tiny bit because it's uniquely shiok.
This dish is on the newly-launched communal dinner menu priced at $68 nett per pax. It's available every Friday and Saturday evening but you can call a few days ahead if you wish to have a group dining event on another night.

We didn't have that, but we did have a good steak, fine wine and my favourite company.
I'd definitely go back to Skirt at W Sentosa for a great meal with awesome service and chill ambiance. They have this Tomahawk Tuesday promo where you can get a 30-day Jack Daniel's single barrel dry-aged Tomahawk steak at just $199++ per kg! Easily feeds 3-4 depending on sides ordered. I'm aiming to go back for that next. One day… 😅
