Garlic, ginger, lemongrass, fish sauce with coconut juice (not milk) and a sprinkling of sugar makes an amazing sauce in the oven. Love how my mind chooses to de-stress...it churns up new recipes! Today, probably inspired by yesterday's amazing bouillabaisse, it told me to grill some giant fleshy prawns and braise beef mince with mum's special sambal as the starter, add in butter, turmeric, heaps of fresh tomatoes, green onions, and a nice flow of Merlot. Stir in some chopped dill in the end and serve in a bowl of arugula and buttered toast on the side. Super rich and super indulgent. I shall christen this dish "Beoufllabaisse", a whole new surf and turf experience to add to my repertoire.
