There is something hypnotic about seeing an entire griddle full of glistening golden brown pork belly with its sweet smokey flavours wafting through the air which turns many of us into drooling fools.

Hanam Pig House is one of most famous South Korean restaurants which specialises in this mouthwatering dish. The samgyeopsal is pre-cooked in the kitchen to reduce the BBQ smoke in the restaurant and finished on the griddle in front of you. There is always an pulsating sense of anticipation when the server lays the entire slab of meat on the griddle and proceeds to slice and cook it for you.

I personally like to wrap my samgyeopsal in pickled myeongui namul with some roasted garlic and kimchi. The pickled leaves have a mellow, subtly sweet alkaline flavour which goes really well with the pork belly.

Writing this post is making me really hungry at 1 am in the morning. Not a good idea.
