Opened fairly recently, GLAZE is a fairly new bakeshop that had recently found home in a kiosk stall at 111 Somerset. While the stall operates out of a shopfront that is originally intended to be a takeaway kiosk, GLAZE does have a dine-in space in the next unit that comprises of counter seats placed for groups in pairs. Carrying a small selection of bakes, expect items such as muffins, sliced cakes and tarts available — one may wish to note that the variety of bakes may be a little limited during the first hours of opening due to some of the cakes being freshly-prepared on-site and needing some time to set.

The Florida is essentially a passionfruit tart with lemon curd and Creme Legere (i.e. light cream) — a dessert that would likely attract the attention of those who prefer tangy desserts over sweet ones. With passionfruit layered over the top, the seees to provide a slight crunch which sets it apart from the usual passionfruit tart where a curd is used. Digging into the tart, it is noticeable how the tangy and zippy notes tone down as the lemon curd slowly takes over the sharper notes of the passionfruit curd; the former likely mixed with the Creme Legere to achieve the lighter note overall. The tart base is well-made with this one; it comes with quite the crunch without being overly hard or dry — somewhat cookie-like but slightly lighter and held up the tart and the curd fairly well even when under the fork.

Whilst I have yet to try a substantial number of items off GLAZE’s menu, I was pretty surprised by the quality of the items that they have to offer — the Florida being a tart which seems to have a thoughtful touch, while I was equally impressed with how they could do a pretty mean cuppa for the Flat White I had despite being primarily a bakeshop; so smooth and creamy with a balanced body and an earthy flavour profile, and with Latte Art that is so well-pulled. Somerset may be a spot where there are quite a few dessert choices to choose from, but GLAZE is one which I would say is a pretty underrated one that deserves more attention.
