Jade's Chinese Executive Chef Leong Chee Yeng is a remarkably creative person, and his creations this Chinese New Year doesn't disappoint. The Fullerton Hotel restaurant's festive menus start from $118++ for a Family Style Set Menu (5 pax) and $98++ for Individual set menus, featuring prosperous dishes like ingot-shaped Poached Wagyu Beef and White Radish Dumplings, Wok-Fried Boston Lobster with Preserved Duck and a comforting Sweet Rice Wine Soup with Rice Dumpling and Snow Lotus.

Don't forget the Gold Rush Salmon Yu Sheng with Champagne Jelly, Shallot Oil and Kumquat Dressing which comes in a specially-decorated plate!
