The best would be the Southern yellow curry for its creamy mouthfeel and smoky aroma. Goes fantastically well with their organic riceberry from the Surin province, the yellow curry contains spanner crab meat from the gulf of Thailand, hummingbird flowers, Thai samphire and turmeric. Each of the dishes has their own identity and uniqueness, and as a foreigner, I really like the flavours. However, to be served with so much curries in a single seating can be quite overwhelming. Nonetheless, if you are a tourist, you will be intrigued by the myriad of flavours from the Southern and Northern of Thailand. On the other hand, these dishes might not appeal to the locals as the flavours are not as intense as the originals.
