Interestingly, the Iberico Secreto (secret in Spanish) is a one of Spain’s best kept secrets. There is no definitive answer as to which cut is it as a butcher’s “secret cut” may depend on the butcher. After verifying with the restaurant, the fantastically tender and highly prized cut used in this baguette is from the pork’s shoulder. It is simply perfect with the crusty baguette, grilled peppers and the creamy luscious cheese. 😋
