Ugly yet alluring Basque Cheesecake changes the way we define cheesecake.

I’ve tried the Basque Cheesecake ($32/whole cake) by Waku Ghin, which mind-blowing good. Blackened top surrounded by burnt parchment paper, it hides a gooey centre. Well-balanced and not gelat (overly rich), you can’t help but go for seconds.
