The sweet and fleshy clams (freshly flown in from the coastal town of Putian City) are presented in a few creative ways at PUTIEN. One of my favourites is the 𝐒𝐭𝐞𝐚𝐦𝐞𝐝 𝐃𝐔𝐎𝐓𝐎𝐔 𝐂𝐥𝐚𝐦 𝐰𝐢𝐭𝐡 𝐌𝐢𝐧𝐜𝐞𝐝 𝐆𝐚𝐫𝐥𝐢𝐜 (𝐒$𝟏𝟗.𝟖𝟎) which features lightly steamed half-shelled clams topped with a generous amount of minced garlic and spring onions. Another simple yet absolutely memorable dish is the 𝐃𝐔𝐎𝐓𝐎𝐔 𝐂𝐥𝐚𝐦 𝐎𝐦𝐞𝐥𝐞𝐭𝐭𝐞 (𝐒$𝟐𝟐.𝟖𝟎) which is a perfect combination of eggs and clams. Spicy food lovers will relish the 𝐒𝐭𝐢𝐫-𝐟𝐫𝐢𝐞𝐝 𝐒𝐚𝐦𝐛𝐚𝐥 𝐂𝐡𝐢𝐯𝐞𝐬 𝐰𝐢𝐭𝐡 𝐃𝐔𝐎𝐓𝐎𝐔 𝐂𝐥𝐚𝐦 (𝐒$𝟐𝟐.𝟖𝟎) in which the flavourful clams are stir-fried with a generous heap of chives and sambal for a distinctive South-East Asian flavour.
