Mind you, this is not your ordinary 咕咾肉 sweet and sour pork! First and foremost the cut used are not typical. Instead of pork belly, ribs were used. The natural springiness and juiciness of the ribs works perfectly in this dish, although it's chunkier it has a better bite to it. The grilled flavours also give this dish a less familiar twist but in a good way. I cannot not mention the other essential accompaniments - pineapple and capsicum, they comes nicely caramelised which enhances the overall taste and appeal for the dish
