They use only charcoal to heat the soup up so you can taste the slightly burnt (not in a gross way I promise HAHA) taste in the fish and soup! It's a tad pricey but I feel that the price is quite justified as I was really satisfied at the end of it. We ordered the braised side dishes too- I recommend the humble egg.
