A four-time awardee of the Tokyo Michelin Bib Gourmand from 2015-2018, we came with expectations and they surely didn't disappoint. The noodles are housemade using Hokkaido flour and wholegrains, making them extremely smooth and chewy whilst carrying a nutty fragrance. I particularly love their Shio Hamaguri Soup Signature ($14.90) which comes with their signature triple soup, porcini paste, a slice of cha shu and pork belly. Their soup, I must say, gives such a deep umami flavour that I can hardly get anywhere else. You get the pungency of the porcini, aroma of the white truffle oil, freshness of the Hamaguri clams, richness of the pork bone and earthiness of the Japanese broth all at once. Truly an eye-opener and I highly recommend.
