Tried this Japanese Bak Chor Mee for the first time - ordered the Tokyo Maze-Soba - Udon-like noodle that was chewy and springy and topped with spring onions, chives, seaweed, Sou vide egg and a mixture of spicy minced meat and ground Saba fish. Added some Kombu Vinegar over noodles and it gave it a totally different flavour which I really liked.

I’m glad I ordered the regular bowl cos the portion was quite big. And as such, I shouldn’t have ordered the gyoza.
