Woke up abit too late today again !! 😂 So there goes breakfast but had a good Nasi Lemak rice for lunch !! Served with air fried chicken, otah, egg crepes and nuggets.

Nasi Lemak Rice
1/2 cup rice
Coconut milk
Pandan juice (extracted from blending pandan leaves and water)
Coconut oil
1) Rinse the rice. Add coconut milk enough to the 1/2 level mark of the amount of rice to be cooked in the rice pot.
2) Add pandan juice to 3/4 level mark.
3) Add 1 tbsp coconut oil. In all, the amount of liquid should be just below the level mark of the amount of rice to be cooked.
4) Cook in rice cooker on plain normal rice mode.
5) When done, give the rice a few quick stirs to mix the coconut milk well. Serve !
For the Egg Crepe:
2 eggs, beat slightly w pinch of salt
1/2 tbsp cooking oil
Method:
1) Heat up pan w oil. Make sure base and slightly above sides of pan is well covered with oil.
2) Add egg and swirl pan to form thin layer of egg in pan.
3) Use spatula to loose the sides slightly.
4) When egg no longer sticking to pan, off flame.
5) Use a plate bigger than pan size and cover. Flip pan over.
6) Cut the crepes into triangles as desired.
