Was expecting more plating for this dish for it came just like this with just five mini Benedict that seemed pretty cool as party canapés. Brioche had a decent density, while carrying a subtly sweet flavour that somehow worked with the smoky, cured flavours of fresh prosciutto ham and the eggs were definitely flowy, with a subtle tanginess from the hollandaise sauce. Good to share with a large group as a snack at the side.
