Chargrilled secreto iberico de bellota (a 'hidden' piece of meat between shoulder and ribs, this Spanish iberico pig is also fed with bellota (acorn in Spanish) which further enhances the marbling and the quality of fat).

Served with a duck fat potato terrine. I had fun eating the terrine, cutting through the very thin slices of potato, which obviously took a while to put together.
