I was never really a pancake kinda person, but this dish made me want to get my own iron skillet so that my sister can try making this too. The pancake was so soft and almost like custard- just melted in my mouth. I think what really made this amazing was the toppings though. It came with Meyer lemon curd, burnt honey chantilly, olive oil caramel and grapefruit on top. The citrusy flavours worked so well with the honey and I honestly can’t think of a better combination.
