Looking good from every angle, the “Codfish Mousse with Piquillo Peppers Marmalade” was one of my favourites from the new items at FOC Restaurant on Hongkong Street. That finishing touch of sorrel may not look like much but it ups the ante on the flavour profile considerably.
Besides the novelty of enjoying cod in a sensuous velvety foam form, what I liked very much was how its warm savouriness was played off by the light sweetness and crunchy texture (from the tiny pepper seeds) in the marmalade.
By the way, I don’t know how or why but EVERY SINGLE TIME I step into this particular FOC restaurant, there is always some kind of party happening!
