Super impressed by these dainty chouquettes, which have the perfect choux pastry texture – crisp and mottled on the exterior, soft and tender inside.

My favourite is the innocuous Vanilla, which packs loads of rich flavour in its pristine white filling of mascarpone cream and white chocolate ganache, both of which are infused with Madagascar vanilla.
