local wild mushroom risotto - local wild pine mushroom [top], slippery jack mushroom, fresh marjoram, thyme & sage [from the kitchen garden], & parmasan cheese. by chef dan hunter.

local wild mushroom risotto. the top wild pine mushroom has a smoky flavour. the slippery jack [brown] has a very fibre texture. this dish is season special, as wild mushroom is great during winter season.

charcuterie - marinated olives [star anise, cinnamon sticks, thyme, rosemary, lemon zest, orange zest] , spiced almonds [cayenne pepper, chilli]
