Vietnamese cuisine is characterised by the harmonious blend of sweet, sour, salty, spicy flavours, and this innocuous little bowl is chockful of that winning combination. One spoonful of that fiery broth made from simmering beef bones, lemongrass, fermented shrimp paste, sugar and super spicy chilli oil, will set your tastebuds alight, oh afternoon delight, and leave you craving for more. Silky rice noodles and tender beef slices are on point, whilst elsewhere a healthy handful of cilantro, mint, basil, chopped onions and sliced chilli add crunchy texture and herbaceous complexity. Fragrant and comforting traditional Asian fare that is at odds with the trendier options surrounding it in Pasar Bella, but more than welcome in my books.
