Mai Home Saigon Culinary Art Centre - Lesson began with a tour of Ben Thanh wet market, the biggest wet market in Saigon District 1 but very touristy and hence a tourist trap. But the food section is as amazing as any wet market in Southeast Asia with a beautiful display of fresh seafood, meat and vegetables. Even saw 2 rats, not for sale, but scurrying down the drains. That's something you definitely won't see in Singapore.
Whipped up a 4 course Vietnamese meal of Beef Pho, Grilled Fish in banana leaf, stew chicken in ginger (which is a salty version of 宫保鸡丁)and Vietnamese Salad Roll. I didn't know broth of pho is made up of so many spices ( cardamom, star anise, clove, coriander leaves and cinnamon), and boiled with beef bone, grilled onion, ginger and shallot. Broth is only ready after 6 hours. So much effort for a seeming simple dish!
