aesthetic notwithstanding (because cheese slices too heavy and sat into soup), the addition of baked gruyere cheese to the home made french onion soup was just sheer joy when you chew onto the hearty cheesy bits. added carrots and splash of white wine to the onions for that extra sweetness and flavor. gosh, need so many more buttered toasts to soak up everything.
