A dining experience unlike anything else in Singapore - for fanatics of the Japanese spirit of artistry and perfection. Clean, wooden furnishings and the respectful silence put you at ease. This dish in particular was every unagi don you've had - elevated. The pickles don't bite, but appetise. The unagi melts like butter and the rice is grainy, loose yet sticky. The sweet sauce doesn't leave a film on your tongue. Respect to Chef Hatch for doing so many things right.
