Unlike your usual oyster omelettes, this one is done Teochew style whereby it's drenched in gravy topped with a generous portion of fresh, big oysters. Those who are not a fan of oysters will probably not be able to take the fishiness of the dish. Otherwise, the omelette is soft and fluffy while the oysters are really fresh. The addition of gravy makes you feel less guilty for eating this as opposed to the other variant which is drenched in oil instead.
