Jaffa Cakes are a part of the chef's childhood, and this reiteration of the Jaffa Cake is the chef's take of his ideal version of a Jaffa Cake. I liked how there is this light, crusty layer of chocolate encasing the cake that gives just this teensy bit of chocolate flavour, but still very lightly evident with the Yuzu mousse within the cake that made it very palatable especially for those who love the chocolate and orange flavour combination. The Yuzu meringue comes a little salted, and gives the Mandarin ice-cream a little flavour contrast while the sugary bits at the bottom gives it a nice chew while allowing the dessert to hit a good balance of tart, sweet and salty flavours. Very interesting indeed.
