Each of the courses can also be paired with specific Cattier Champagnes at an additional charge or diners can opt for the Cattier Champagne flight (a glass each of the Icone, Rose and Premier Cru) at $50 per pax. Staring of with the dining experience, you will be served with a Vichyssoise with Hokkaido Scallop, which warms the tummy with the leek potato soup with the added luxury of avruga caviar on top of the pan-seared scallop. After the opening, diners will be served with the appetiser of Lobster Thermidor whereby the fresh Boston lobster is prepared two-ways, one that is topped with cheese and the claw is poached and basted with brown butter. Next up comes the main course and you can choose between the Black Cod or Beef Tenderloin before ending the meal with a Christmas Cake.
