Mott 32’s Signature Applewood smoked Peking Duck.
This ain’t your ordinary duck as it requires 48hours of tedious preparation and roasting time, using both Cantonese and Beijing techniques. When the team presented and carved the duck right in front of us, we were literally in awe. Recommended first serving, to dip the crispy smoked duck skin in raw cane sugar. Second serving, to place the royal sliced duck on piping hot steamed pancakes with a mixture of hoisin sauce, peanut and sesame sauce, wrapped in cucumber batons and julienne leeks. Images do no justice on the taste and how succulent the meat. Did I mentioned the thickness of the skin was 2-3mm? Worth trying for first timer! Great hospitality and the team were so accommodating despite us running late on our slot.
