Whenever i visit an area or a country, i always try and savour the local food. Even more, when I am on a culinary trip, obviously! Even in Minangkabau/West Sumatra (where Padang is located) itself, there are different kind of cuisine with different types of dishes, ingredients, styles of cooking and flavours. .
One typical Minangkabau dish is dendeng which is smashed smoked/grilledbeef. There are different types of dendeng. One of the wellknown ones is in Rumah Makan Dendeng Batokok Muara Kalaban in Sawahlunto, about 5km from the city of Sawahlunto. They have been using a traditional method of cooking of which the recipe has been passed from one generation to another. The sliced lean beef is marinated for 5 hours in different spices, and afterwards smoked for 10 hours. Then pounded into thin slices with big black stone.
Before served, it is grilled with special home made pure coconut oil. The dish is very addictive, i can assure you one slice won't be enough. It was so flavourful with beef flavour, meat was juicy and tender, and the coconut oil was very fragrant.
The restaurant also serves other typical minangkabau dishes but this dendeng is the star of show!

Before going on this culinary trip, i wasn't really a big fan of dendeng, as in some padang restaurants the meat could be hard and chewy. However, i really enjoyed this one and it confirmed that, as long as it is done right; with the good quality ingredients, with the right recipe and cooking technique, one dish could stand out from the rest!
