Established in 1943 and now managed by the 3rd-generation owner, this stall uses an 80-year-old family recipe, stewing mutton bones for over 3 hours.

Their rendition features a medley of 11 herbs, including bei qi / astragalus root, gan cau / liquorice root, dang shen / codonopsis root, dang gui / angelica root, yu zhu / Solomon’s seal, goji berries / wolfberries, star anise, cloves, and more. The resulting thin and semi-clear hot soup / broth takes on a deep meaty savoury sweet bitter herbal flavour.

Garnished with tender deboned mutton meat and bone-in mutton ribs with meaty savoury flavour, bouncy mutton meat balls with meaty savoury salty flavour, crunchy stomach / tripe with savoury salty flavour, and fresh coriander with vegetal bitter herbal sweet flavour. Accompanied with a bowl of white rice.
