Full disclosure, I know the chef so I got to try this before the shop opened! But you know how you can't always beg your friend to make your favourite dish all the time because pai seh? Now I don't have to! I adore this mee siam, it's moreish, tangy but there's a sweetness to the gravy too. It's got right balance of acid, savoriness, sweet and spicy.
