My favourite of all was the Braised Beef Cheek! Tender braised beef with mash sweet potato and carrot kimchi on some toast. It almost feels like a deconstructed bibimbap! The chicken confit is unlike any other confit, where it is sous vide first before confit-ing, to ensure that the chicken does not dry out and retains its tenderness. I also like how they chose to use leaner beef cuts from a mixture of Australian grass fed beef and US corn fed beef to bring out the flavour of the beef in their beef batter! (Can almost say it's healthier but stronger in flavour!) The Montana Bangers & Mash comes with a century egg potato foam, which was very light in texture and very unexpected.
