A seasonal dish, this is a sweet twist on Micro’s ricotta tartine. There is the same beautiful sourdough with a chewy centre and crisp crust, and the same pillowy light heapings of ricotta, topped with persimmon purée, persimmons, candied walnuts and rosemary. It’s unique, delicious, and hearty. The mix of sourness, sweetness and savoriness, and the mix of chewy, soft and crunchy textures, complement each other amazingly. The prices at Micro keep rising but this is totally worth the $15.
