The fries are generously coated with kombu, served with parmesan and truffle mayonnaise. It was not oily and remained crisp till we emptied the bowl. The taste/smell of truffle was not too strong, subtle enough to keep us going while appreciating the flavours of kombu and parmesan cheese.
