Tsuta (@tsutasingapore) has been on my food radar for a long time and I was finally able to to remove this from my checklist after Tsuta opened its second Singapore outlet at Jewel Changi Airport (@jewelchangiairport).

The signature Shoyu Ramen ($15) was topped with truffle puree, and I'm not too sure if it's a gimmick or if it's similar to the original shop in Japan, but it pleasantly added a very subtle umami and earthy fragrance that perfumes throughout the broth, without overpowering the other ingredients. This delicate balance was nicely executed, and the overall taste was light and yet flavourful. If you're used to the stronger tonkotsu broth at other Ramen establishments (think Ichiran or Ippudo), you may find this an acquired taste at the start. But after a few mouthfuls, I began to fall in love with this and I'm sure you will too.

The noodles were also quite different from the Ramen at other shops. Here, it was really smooth, springy and yet firm. I wished I had ordefed an extra serving of the noodles (40g at $1) which can only be selected when you first place your order with the server. 🍜
