Nowadays most onion soup are crappy, especially they skip so many steps in making the soup. I worked in a French restaurant before and to cook an onion soup like this, takes a good full 2 days. One day to make beef stock and another day to caramelised the onion under low heat for hours.. And the best thing is served in a bowl with a piece of baguette, topped with cheese and go into the oven! Bon appetité!
