Quite possibly the highlight of this meal: rich and punchy coconut milk and turmeric curry with well, mashed prawns. It sounds potentially cloying, but the lemongrass and gingers helped to keep the full-bodied sauce balanced. And the prawns weren't smashed to oblivion, so there's still a lovely bite once in a while.
Make sure you pluck the basil leaves, mix that heavenly sauce with the chopped snake beans, pickled celery, bean sprouts and rice noodles thoroughly, then slurp, slurp, slurp!
