Supposedly invented in the city of Miyazaki in Kyushu during the 1990's, nikumaki literally means 'wrapped in meat'. A large-ish riceball completely wrapped in strips of bacon-esque pork then topped with mentaiko mayonnaise was my choice out of a half dozen toppings including cheese, green onion mayonnaise, ginger and kimchi. Quell the between-meal hunger pangs with one of these.
