Alliance Seafood is one of the more famous stalls at the Newton Food Centre and it is currently on the Michelin Bib Gourmand, so do expect pretty long queues if you are willing to buy from this stall. That being said, the stall has an exceptionally large selection of seafood items and some of their more popular ones include their chilli crab (with seasonal pricing) and the sambal stingray.

We ordered a small sambal stingray, which was very reasonably-priced at $12 and it was very decent. There was quite a lot of meat to eat for two of us and the stingray was served piping hot. Our favourite was the generous serving of sambal chilli, as it was really spicy and it provided a really good kick so you may want to be careful if you are not good with spicy food.

We were pretty satisfied with the stingray and we were pleasantly surprised that it was served to us pretty quickly (around 15 minutes), given that it was a Sunday night and the hawker centre was packed to the point where it was challenging to find a seat.
