The chilli, white wine and tomato sauce tangled with aged pork cheek packed a moreish, spicy punch, oozing from the cylindrical rigatoni which had a toothsome bite and served as the perfect vehicle for carrying the sauce. Dusted with shavings of pecorino, the combination was ebulliently umami.
