Starting with the oysters, these are sourced directly farm-to-table from Hama Hama Oyster Company and each slurp will allow you to enjoy the freshness of the Pacific Northwest, accompanied with Humpback’s house mignonette that gives it a nice tangy zing with a burst of refreshment. Before the sharing plates, there are several light bites in the menu such as the House Cured Hamachi Pastrami ($18) that has been smoked in house with applewood and finished with smoked sour cream, pickled mustard seeds and dill sprigs. A snack that comes highly recommended is the Mussel Toast with Spicy Nduja ($16, 2pcs) in which the plump Australian mussels are tossed in a smoked oil, served on toasted brioche and topped with vinegar gel, fennel flower and chives.

The menu consists of small and large plates from the refreshing White Asparagus with Blue Crab and White Miso ($25) to Purple Clams with Toasted Koji and Green Asparagus ($31), and the Marble Goby with Broccolini served with a black garlic shallot purée and sake cooked mussels.
