[Buona Vista] Here’s an XO Fish Head Bee Hoon ($11 for 2 pax) where you can actually taste that underlying hum of alcohol—the subtle warmth and fragrance it brings melds wonderfully with the rich yet not overly milky broth (devoid of any unpleasant fishy odour), and chunks of deep fried fish head (get fish meat if you’re lazy to pick out bones).

Although, it should be said that it wasn’t as flavourful as I recall it to be when I first had it years ago, but this still beats most places hands down.
