I had my doubts about how good a supposedly simple egg sandwich could be, but Eggslut's hype is well-deserved. Even after enduring the ignominy of overnight refigeration and the morning after's quick warm-up in the microwave, the signature Fairfax still held up remarkably. The cage-free scrambled eggs still remained soft and pillowy, its mild, creamy butteriness accentuated by chives, caramelized onions, cheddar and sriracha mayo in an amalgamation of sweet, cheesy and subtly spicy. Lastly, the glossy buns were the right size and ratio to fillings, and had great texture and flavour too.
