This piece of deceivingly plain salt-water eel was simmered in a fragrant, clear broth until cooked. It was then topped onto freshly hand-moulded Japanese sushi rice and served warm.
Deliciously soft to the bite without a tinge of fishy taste like that of Unagi, the Anago is our new love and we miss it for sure!
