Featuring the Tori Paitan (S$12 NETT) A blend of collagen rich broth achieved by 5 meticulous hours of boiling chicken bones and feet, along with Chef Yuki’s special Shoyu Tare to yield the umami-packed creamy concoction. The piquant broth and silky smooth noodles are accompanied with slices of roasted teriyaki chicken which are brined for hours in elegant shoyu and white-wine marinade. This comforting bowl is then garnished with Sweet Corn Kernels, Shiitake mushroom and Baby Leaves and Lava Egg.
