I was never a fan of squid, because of how it's poorly cooked most of the time, until I met these babies. Roasted to perfection, these baby squids were ultra tender as they broke apart gently when I bit into these plump morsels. The second surprise came when I tasted a juicy interior - it was the fatty goodness from the guanciale stuffing with a wee bit of feta for a little creaminess. Definitely a dish I'll order again.
Super moreish parcels of softened guanciale encased within tender baby squid. Served with sprigs of chervils (I think) to counter the richness.
