Min Nan is the stall to go to for stellar prawn noodles. According to both Tastemakers Vanessa Kou and Julius Lim, the broth here is on the lighter side and not quite packed with robust, punchy flavours as one might expect, so opt for the Pork Rib Prawn Noodle Dry (from $4.50), which sees the noodles tossed in pork lard and fried shallots — shiok! The noodles have Tastemaker Vanessa's vote of confidence. A mix of rice vermicelli and yellow noodles, they were cooked "just right – firm, not soggy or undercooked". The pork ribs are also spot-on tender and meaty, adding to a very humble but hearty bowl.

Spotting a routinely queue, Min Nan Pork Ribs Prawn Noodles 閩南排骨虾面 serves a pretty satisfying bowl of Pork Rib Prawn Noodle Dry ($4.50/$5.50). However, the soup on the side might be their weakest link. Due to the lack of robustness, the broth was very much of a milder variation that didn’t have the usual oomph and strong umami flavour of crustacean (but hey if a light prawn noodles soup is what you are looking for). The noodles, a mix of rice vermicelli and yellow noodles, on the other hand were cooked just right - firm, not soggy or undercooked. And add that with the fragrance of shallots and pork lard, the humble bowl certainly captured my heart. The pork ribs too, were well-executed - tender and meaty.
